The most important thing when crocheting a hat for the first time: work a gauge swatch. Hats are the one project where gauge is not optional. A half-inch difference per 4 inches of fabric turns an adult medium into a child's large or a fitted beanie into a saggy bucket hat. Work 10 rounds in your chosen stitch, measure flat, and adjust hook size until your gauge matches the pattern.

For yarn, a smooth worsted-weight acrylic (Red Heart Soft, Lion Brand Heartland, Caron Simply Soft) is the easiest for a first hat. Avoid anything fuzzy or textured on your first attempt — you need to see the stitches clearly. Once you've made two or three beanies in acrylic, the jump to wool or alpaca blends for warmer hats is worth it.
